Mutton vegetable rice recipe

 



Ingredients:


500g mutton, cut into small pieces


2 cups of basmati rice


2 cups of water


1 onion, chopped


3 garlic cloves, minced


1 tsp ginger paste


1 tsp cumin powder


1 tsp coriander powder


1 tsp garam masala


1/2 tsp turmeric powder


1 cup mixed vegetables (carrots, peas, green beans)


Salt to taste


2 tbsp vegetable oil


Fresh coriander leaves for garnish



Instructions:


Rinse the rice with cold water until the water runs clear. Soak the rice in water for 20 minutes.


In a large pot, heat the oil over medium-high heat. Add the chopped onion, minced garlic, and ginger paste. Saute for 2-3 minutes until the onion is soft.


Add the mutton to the pot and stir well. Cook for 5-7 minutes until the mutton is browned on all sides.


Add the cumin powder, coriander powder, garam masala, turmeric powder, and salt to the pot. Stir well to coat the mutton with the spices.


Add the mixed vegetables and cook for 2-3 minutes until they are slightly tender.


Drain the water from the soaked rice and add it to the pot. Stir well to mix everything together.


Pour in the 2 cups of water and stir gently. Bring to a boil, then reduce the heat to low and cover the pot with a tight-fitting lid.


Cook for 15-20 minutes until the rice is tender and the water has been absorbed.


Fluff the rice with a fork and garnish with fresh coriander leaves before serving.
